Fall, Football and…Vegetables!

Like us, are you a fan of football, tailgating, and all the traditional fare that goes along with it? Does your game day menu read something like this: spicy chili, burgers, pulled pork, and hot wings, where the only vegetables present are a few celery and carrot sticks that exist as garnish? No more! We are now super-fans of cauliflower buffalo bites – all of the taste in a fraction of the time and cost of buffalo chicken wings – and PS: cauliflower is a vegetable!

Recipe: Buffalo Cauliflower Bites

Ingredients

1 cup flour of your choice (whole wheat, all-purpose, gluten-free)
1 cup liquid of your choice (water, milk, soy milk)
1 tsp garlic powder
1 tsp salt
1 tsp paprika
1 head cauliflower, cut into florets
1 cup buffalo or hot sauce (Not into heat? BBQ sauce works great too!)
3 tbsp of your choice, melted (butter, olive oil, vegan margarine)

PREHEAT oven to 450°F.
COMBINE flour, liquid, salt, paprika, and garlic powder in a large bowl and stir until smooth. Add cauliflower and stir gently until florets are evenly coated with batter.
ARRANGE cauliflower in a single layer on lightly oiled, large baking sheet (preferably nonstick). Bake 25-35 minutes or until golden.
COMBINE sauce and melted “butter” and pour evenly over cauliflower. Toss gently until cauliflower is evenly coated.
BAKE 10 minutes or until cauliflower begins to crisp, rearranging florets occasionally if needed. Serve with blue cheese or ranch dressing, and celery and carrot sticks.
